What is Bread Free?
The first company in the world capable of producing gluten-free wheat flour thanks to its patented biotechnology, the use of agro-food byproducts, and artificial intelligence.
The process can be applied to other gluten-containing cereals, such as barley or rye, but we are currently focusing our innovation on wheat.
What exactly do you do?
At Bread Free, we use biotechnology and artificial intelligence to transform conventional wheat flour into flour suitable for a gluten-free diet.
Thanks to our patented process, we reduce the gluten content to below 20 ppm (complying with the “gluten-free” standard regulated by European Regulation (EU) 828/2014), while maintaining a composition similar to conventional wheat flour. This allows us to achieve a flavor and aroma very close to traditional wheat, with comparable nutritional quality.
Why did Bread Free Bread Free come about?
The idea came from our CEO and Co-Founder, Daniel Gómez-Bravo, who recognized the daily challenges faced by people with celiac disease and their families when searching for suitable, high-quality foods.
This motivated him to assemble a team of professionals and seek a solution for this community, which often sees their monthly food budget skyrocket due to the difficulty of finding truly safe products free from possible gluten traces.
Thus, the Bread Free project was born in 2020, becoming the world’s first startup to achieve this milestone. Through patented technology capable of processing gluten-containing cereals such as wheat, barley, and rye, we ensure safe consumption for people with celiac disease.
What kind of collaborations do you do?
Through Foody, our distributor in Spain, we collaborate with gluten-free food professionals (bakeries, pastry shops, restaurants, etc.) to create products using PURA.
Do you collaborate with influencers?
At this time, we do not send products to influencers because we are focused on the B2B market.
However, we do collaborate by providing content for events. Due to budget constraints, these collaborations are currently not paid advertising.

How is gluten extracted from flour?
We want to assure you that we follow good practices to prevent cross-contamination during the production of PURA.
The gluten levels measured by the ELISA R5 test are below 20 ppm, guaranteeing that the final product is safe for people with celiac disease.
Are you sure it is the first on the market?
Until now, the only thing that had been patented was gluten-free wheat starch.
PURA is the first gluten-free wheat flour. It has been developed using proprietary technology, protected by a patent, that allows the production of gluten-free products without sacrificing their organoleptic and nutritional properties.
How do you incorporate AI?
AI acts as a support tool in our process, optimizing production, reducing analytical costs, and shortening operation times.
Have you done product tests?
We comply with current gluten-free product regulations.
We have conducted tastings at fairs and internal validations, and the feedback has been very positive, with no noticeable differences compared to conventional wheat flour.
All our flours have been tested in laboratories, guaranteeing gluten levels below 20 ppm and ensuring safety for people with celiac disease.

What type of flour is PURA?
PURA is treated wheat flour.
The same product as always, but without harming the health of people with celiac disease, and with properties that closely resemble those of traditional wheat.
The first PURA reference we are working on is white flour. However, we are exploring all types of flour, including whole and refined varieties, as well as rye and barley flours.
Where can I buy PURA flour?
Currently, our focus is on establishing partnerships with companies in the sector to ensure both product quality and proper distribution before expanding availability to the general public. These collaborations result in products made with our gluten-free flour.
We will keep sharing all updates on our social media channels! Very soon, our flour will be available to end consumers in small packaging.

Could I consume it if I have NCMS/other?
We recommend that you consult your doctor to determine if it is suitable for you.
Does it contain fructose?
PURA is a wheat flour with no added fructose.
If you have fructose intolerance, we recommend always checking the labeling of the final product or consulting directly with the manufacturer.
