What is Bread Free?

Basically, we’re the ones who have come to change the rules of the game. We’re the first company in the world capable of taking wheat and, through a super innovative biotechnological process (which we’re already patenting) and a touch of artificial intelligence, turning it into 100% gluten-free flour.
Yes, it sounds like magic, but it’s applied science to help you eat like you always have. Although our technology also works with barley or rye, right now we’re focusing all our energy on wheat, because we know it’s what you miss most at the table.

What do we do?

At Bread Free, we’ve set ourselves an ambitious goal: to make gluten-free eating no longer a sacrifice. How do we do it? We’ve combined biotechnology with a  touch of artificial intelligence (yes, it sounds like science fiction, but it works) to transform everyday grains into 100% gluten-free flour. And rest assured, we  strictly comply with all European regulations, so you have absolutely no worries!
The best part is that it’s not your typical tasteless or odorless substitute. Our technology (which, by the way, is currently patent-pending) allows us to achieve what  truly matters: unique flavor, aroma, and color. And we haven’t forgotten about health: our flours retain almost all their nutritional components, especially  fiber and protein.
And in the kitchen? Well, you’re going to love it. It behaves just like regular gluten-free flour. Whether you fancy making pancakes for breakfast, baking cookies,  or simply thickening a sauce… Our flour works in any recipe.

How it all began

This all started with an idea from our CEO, Daniel Gómez-Bravo. Daniel realized something that probably sounds familiar: how complicated daily life is for  people with celiac disease and their families. It’s not just about finding good food; sometimes it feels like you need to take out a loan to fill your shopping cart with products that, even then, aren’t always satisfactory.
With that in mind, she decided it was time to change the game. She assembled a fantastic team and set a clear goal: to find a real solution so that eating gluten-free wouldn’t be a luxury or an ordeal of labels.
That’s how Bread Free was born in 2020. And, although it might sound like bragging (and maybe a little), we became the first startup in the world to achieve this!  Thanks to our patent-pending technology, we can transform grains like wheat, barley, and rye, making them completely safe and suitable for people with celiac
disease. No worries, no fuss, and all the flavor.

How did we make the world's first gluten-free wheat flour?

That’s the million-dollar question, right? Well, it’s not magic, it’s biotechnology. Thanks to our process (and a little help from artificial intelligence), we treat  cereal grains so that gluten is no longer a problem.
But since we know that health is not something to gamble with, here’s how we protect you:
Say goodbye to cross-contamination: We are extremely careful in the production of PURA. We have super strict cleaning and control protocols to ensure that not  a single speck of gluten gets in where it shouldn’t. Your safety is our obsession.
Highly recommended by experts: It’s not just us saying it, the tests prove it. We subject our flour to the ELISA R5 test (the gold standard) performed in accredited  external laboratories, and the results are always below 20 ppm—and even undetectable!
What does this mean? It means that we fully comply with European Regulation (EU) 828/2014. Basically, it’s the official “seal of guarantee” that allows us to say  loud and clear that our product is 100% suitable for celiac sufferers.
In summary: you can use PURA with the peace of mind that it is safe, tested and perfect for your diet.

Is PURA really the first gluten-free wheat flour?

Yes indeed! And we’ll tell you why this is such a big milestone.
Until now, the only thing that had been manufactured was gluten-free wheat starch. But of course, starch is only one part of the grain; it’s like watching the movie  trailer but missing all the action.
At Bread Free, we’ve gone much further. Thanks to our technology, we are the first company in the world able to process the whole grain to obtain wheat flour that  maintains the essence of wheat but without any trace of gluten.
PURA is, literally, a pioneer of its kind!

Have you tested your flour?

And how! We haven’t just stayed in the lab. We’ve taken our technology to “real life” by conducting industrial validation tests on a whole host of products we know  you miss.
We baked real bread, cakes, cookies, and all kinds of pastries to see how it performed. The verdict? The results are spectacular and remarkably similar to what we all  know.
We are currently finalizing everything so that, very soon, you can have these products available in your trusted store or just a click away.

What type of flour is PURA?

To put it simply: PURA is wheat, but gluten-free.
It’s flour made from the same grain as always, treated with our technology to ensure it’s safe for people with celiac disease. The best part is that, being real wheat, its  properties are very similar to those of conventional flour. It’s like cooking with what our grandmothers used, but with the assurance that it will make you feel
wonderful.

What do we have in the oven right now?

Our star product: Right now we are focused on wheat flour, which is the first PURA product that is already available.
What’s next: We’re not stopping here! We’re already exploring all possible variations, from wholemeal flours to rye and barley flours.

How do I get the most out of PURA?

It’s time to get your hands dirty! PURA is that magic ingredient you’ve been waiting for to make your dishes taste like “the good old days.” Thanks to its authentic  flavor and aroma, it’s perfect for reviving those family recipes with a homemade touch. You can find our recipes on our social media.
For everyday use (Cooking and Baking) If you love cookies, cakes, sauces, béchamel, or breaded dishes, you’re in luck! PURA is right at home with these recipes.  It will give you that nostalgic flavor you’ve been missing, without any fuss.
For master bakers (Bread and Fermented Doughs): This is where things get a little more serious. If you want to try making bread or a good brioche, keep in mind  that PURA is a “low-gluten” flour.
What does this mean? Well, since it doesn’t have gluten to “hold” the structure, it needs a little help. To get a perfect crumb and prevent the bread from  collapsing, we recommend using standard gluten-free cooking techniques, such as adding the ingredients you normally use to make the bread you love. You can  also come to our workshops or use our mixes if you haven’t yet achieved the desired result.

Neither GMO nor buckwheat: Real wheat.

It’s normal to wonder, with all the labels! But the answer is “no” to both:
Is it genetically modified (GMO) wheat? Not at all. We haven’t altered the plant’s DNA. Our secret lies in the biotechnological process we apply afterward, but the  original grain is the same as always.
Is it buckwheat? No, not really. Buckwheat is a different plant that is naturally gluten-free. We work with conventional wheat, the kind that contains gluten, and  that’s where our “magic” happens to make it safe for you.
In short: it’s the wheat you already know, treated in a way you’ve never seen before.

Do you have the barred ear of grain (ELS) seal?

We’re working on it! We’re currently working to begin the certification process so you’ll soon see that seal on our packaging. We know how important this is for  your peace of mind.
Meanwhile, we want you to feel 100% safe:
Safety first: We guarantee that the gluten content in our flour is always less than 20 ppm and undetectable according to the ELISA R5 analysis carried out by  accredited laboratories.
We comply with the rules: This is not something we say; it is what European regulations (the famous EU Regulation 828/2014) require for a product to be  labelled “gluten-free”.
For us, your health is non-negotiable. That’s why, even though the official certification is still in the works, our quality controls are already operating at the  highest level so you can focus solely on enjoying yourself.
